Goats to Guinea House, Christmas in NOLA and Vermont, and Crawfish Pie

It was pretty cold last night and the goats have moved into the Guinea House. There is no telling what prompted the move because goats are herd animals. If one decided it was a good move, the others will follow.

If you want to get into the Christmas Spirit, the hotels in New Orleans go out of their way to decorate for Christmas. Just walking through the hotels and seeing the lights and gingerbread constructions will put you in the Christmas Spirit. 

So much for skiing in Vermont for Christmas! Temperature was 58 degrees with rain. Hopefully, the weather will change over the next few days. Just don’t know if there is any hope for the slopes this week! Ike said he had rootbeer, a fire place, and cable TV- so all is not ruined.

Crawfish Pie Time- Every year at Christmas, we drag out the big pot and make Crawfish pies. The pies are frozen until delivery, so the recipients do not have to cook them immediately. I must admit that the clean up after the pies takes as long as it does to actually make the pies, but it is worth the time and the mess! Jackie C. had her pie last night. She said they may have cut it a little early (you have to let the pie cool for 15 -20 minutes so that the contents stay inside the pie). However, it doesn’t matter what it looks like on your plate, crawfish pie is always delicious. The recipe is in the family cookbook and I will share it soon.
