Here is a fun activity for your home schoolers or anyone who eats lettuce.

If you are having a salad tonight, cut off the bottom of the head of lettuce and stick it in a small bowl of water. Then put the bowl in a window. Within 24 hours, you will see the growth starting in the middle. Within a few days, there will be lettuce leaves for your sandwich. The lettuce in the picture was sliced across evenly. See the growth in the middle? That happened in 12 hours. Your children can start several pieces at the same time and soon they will be harvesting the lettuce for the dinner salad. Of course, you will need to replenish the water as the lettuce grows. Also, break off the new leaves that you wish to use and leave the rest undisturbed until you are ready for it.

When we harvest lettuce from the garden, we place it in a bowl of water in the refrigerator to let it rehydrate. I would imagine that you will need to do the same with lettuce that you harvest from your window garden.

Lettuce at approximately 48 hours after putting in water. Don’t think we have enough for a sandwich yet.

This is at 72 hours.

6th day – yes we now have enough for a sandwich!
